So the 15th of the month has flown by and your untrustworthy moderator has been MIA. I apologize and I hope you all moved to the next bread. If not, quick, you have 4 days to make it! It's (it was) time for some Ciabatta. And apparently I've Americanized this word and have been mispronouncing it. Cha-batta is the correct pronciation. There are three versions that can be made - poolish, big or wild mushroom. And don't forget to read your commentaries on the side.
